From Japan to Reims: The Starry Tale of the Chef at the Racine

© Kazuyuki Tanaka
Chef Kazuyuki Tanaki is not the sort to rest on his laurels. Having spent five years in Japan honing his skills, he embarked on an adventure in France, the country of gastronomy par excellence. While there, he rubbed shoulders with the big names, such as Phillipe Mille (two Michelin stars chef) and Jacques Macron, and set his sights on achieving a Michelin star of his own.
Things began to pick up speed in 2015. Tanaki opened his first restaurant, Racine, in Reims, and quickly rose to fame. Barely five months later, he received the title of ‘Young Talent’. Then came his first Michelin star, in 2017, and he opened a second, more family-orientated restaurant named Doko Koko Bistro (Japanese for ‘Where? Here!’). His dishes bring together his Japanese roots and French know-how, a great combination.
