In Williamsburg, the New York neighbourhood that’s become a hipster hotspot, there’s a place that specialises in Japanese breakfasts and ramen, and which goes by the name of Okonomi.

Okonomi is a small restaurant with just twelve seats and offers an experience that’s worthy of a ryokan in Kyoto: rice, fresh fish from the Atlantic, omelette (tamago) and marinated vegetables (tsukemono) like cucumber, aubergine and white radish. And of course, this meal adheres to the rule of kaiseki, which involves serving a variety of little dishes at once.

When the sun sets, the restaurant transforms into YUJI Ramen. Initially a pop-up restaurant at markets and in bars, YUJI has now found a more permanent home at Okonomi, showcasing fish ramen.
