Near Square Louvois, a few hundred yards from the Bourse metro station in the second arrondissement, Japanese chef Masayoshi Hanada spoils diners who come to taste sushi made by the book.
The ambiance of the restaurant is zen and stripped back: there are eight seats, fabric armchairs, a marble counter, cotton napkins and beautiful chopsticks. The main attraction is, of course, the chef’s surgical expertise. He only uses fresh, quality produce.
The sushi and maki are the stars on the plate, but there are also other featured dishes: squid seasoned with a dash of lime, red tuna, fish (scad) that’s been marinated in salt for four days, intense wild salmon, smoked tuna belly… And for dessert, you’ll be rewarded with rice ice cream seasoned with olive oil, a touch of salt and a sweet soy sauce. The devil is in the detail.
