Tokyo’s New Pizzeria is a Must-Visit

Treat the art of pizza like that of sushi. This is a mantra which several well-known pizzaiolos in Tokyo are following to the letter. Tsubasa Tamaki is one of them. He recently opened a new restaurant, PST (Pizza Studio Tamaki), and is on course to win the title of Tokyo’s best pizza.

This young man cut his teeth at the Savoy, then spent four years at Strada before going on to start his own business. His mentor was none other than Susumu Kakinuma, one of Tokyo’s best-known pizzaiolos. Despite never having actually worked together, Tamaki has adopted techniques used by Kakinuma, and takes inspiration from him when honing his own recipes. Forever in search of perfection, this man who has never even set foot in Italy, is set on making the best pizzas in Japan, if not the whole world. The game is on.
